Our experience in fermentation, bioprocessing, and production is your next strategic advantage
With over 170 years of microbial handling expertise, we have grown alongside industry standards to become a global leader in fermentation, biotransformation, biocatalysis technology as well as food product development lifecycles. Our industry-leading facilities in Pisticci, Italy, operate to the highest regulatory and technical standards, supported by a global network that prioritizes our proximity to you.
Why we choose fermentation
At Gnosis by Lesaffre, we’ve been refining our expertise in fermentation technology for generations. Our journey began with the production of fermented beverages – a practice which later evolved into a broad mastery of novel food-grade product development.
We believe that fermentation offers a number of key advantages when designing nutritional products that support health throughout life. This belief is reflected in our portfolio of globally recognized brands, including MenaQ7®, ibSium®, and MyCondro™.
We carefully select our materials
We focus on material selection to enhance efficiency, scalability, and regulatory readiness from the beginning of any project. Our dedicated Quality Control (QC) teams continuously monitor the production environment – including packaging, air quality, water quality, and raw inputs – to provide absolute peace of mind and mitigate operational risks before they arise.
We’ve mastered precision control
We engineer robust, precision control into every step of our workflows. In our bioprocessing facilities, this takes the form of media pH and composition quality management, as well as the remote control of complex fermentation parameters – including byproduct monitoring. We operate a data-driven approach for seamless scale-up while enabling real-time decision-making and facilitating swift responses to shifting consumer trends or new regulatory criteria. At our customer service and distribution sites, control takes the form of dedicated support, available locally and on hand to guide you through every step of your product’s R&D.
We develop and maintain microbial strains
Our capability to develop and maintain proprietary microbial strain stocks allows us an unbridled selection of powerful, high-performance solutions. Through our diverse and curated library, we can optimize strain selection to enhance product yields and increase our flexibility of design and discovery. We employ dedicated microbiological QC methods to guarantee safety and eliminate the risk of genetic drift. Meanwhile, our extensive experience in handling BSL-1 and BSL-2 strains across complex regulatory landscapes demonstrates our ability to navigate compliance pathways to ensure market entry for your products.
We practice a clean-label purification approach
To guarantee uncompromising purity and performance while maximizing clean-label appeal, we employ the latest in water-based purification techniques, including tangential flow microfiltration and various chromatographic separations. We do this using scalable systems to ensure commercial readiness while minimizing the risk of bottlenecks that can occur when adapting to regulatory requirements and consumer preferences. Partnering with us allows you to leverage this infrastructure and reduce the costs of ownership in your purification workflow.
Fermentation is complex, but quality product development comes naturally at Gnosis
At Gnosis, we leverage complex natural processes to achieve a simple goal – to create best-in-class products for a health-conscious and ethically-aware market. As your expert partner, we can help you do the same.
We are experts in biotransformation and biocatalysis
While these terms are often used interchangeably, biotransformation and biocatalysis are distinct, complementary tools. While fermentation describes the breakdown of compounds by microorganisms, typically accompanied by an expansion of biomass, biotransformation and biocatalysis refer to specific molecular modifications facilitated by fermentative processes.
Biotransformation: The biochemical change in one specific molecule as it is converted into another by microorganisms as they expand in biomass and ferment media.
Biocatalysis: The enzymatic reaction that catalyzes the conversion of one molecule into another (biotransformation), either within complex fermentation mixtures or in more refined, extract solutions.
Through our detailed knowledge of biotransformation and biocatalysis, we can help you make the most of your fermentation practices. We can help you in your technical troubleshooting, QC, and regulatory dossier preparations – all while helping you gain more flexibility for innovation.
Our quality standards are what sets us apart
Quality standards are not just a requirement for effective fermentation – they’re part of a mindset which, at Gnosis, we believe sets us apart from our competitors and helps us lead the way when it comes to nutrition R&D. While our QC labs provide excellent analytical capabilities, we’re also committed to ensuring the quality of our collaborative partnership, throughout both technical and non-technical steps. Our labs are always inspection-ready, and our customer service is always warm here at Gnosis.
We innovate globally and support locally
From our administrative headquarters in France, we operate a network of facilities globally. Customer proximity is a priority in our workflows, and we like to ensure that you feel supported – not only through our expertise in fermentation technology, but in our geographic proximity to you and your market’s needs.
Our principal facilities are based in the heart of Europe
Our principal site, located in Pisticci, Italy, serves as a well-connected hub for our scientific and bioprocessing knowledge base. The facility meets stringent health authority standards and holds an impressive roster of ethical certifications. It is pharmaceutical-grade, good manufacturing process (GMP)-compliant, and conforms to International Organization for Standardization (ISO) 9001:2015 standards. At the Pisticci site, we house dedicated equipment and systems available to you (such as our in-line continuous sterilizer and remote-controlled production equipment). From here, we enable the highest level of optimization and remote workflow control, which can be accessed wherever you are collaborating from.
You can find us across Europe, the US, and Asia

Frequently asked questions:
Q: Is fermentation a sustainable food manufacturing solution?
Yes – fermentation is a highly sustainable and increasingly popular option in food and nutritional ingredient manufacturing. It’s a naturally “green” process that operates under highly controlled conditions and utilizes raw materials that can be sourced sustainably as byproducts from other food-grade pipelines. Moreover, it supports waste reduction and maximizes productive biomass. By utilizing water-based purification instead of other, harsher solvents, we also take extra steps to ensure the sustainability and clean-label appeal of our workflows.
Q: At what stages of our production pipeline can Gnosis offer support?
At Gnosis, we can support your processes and production at any scale or stage. Whether you need help with a single workflow step or multiple production pipelines, we hold the experience and expertise to address each aspect both in isolation and as part of a broader product development lifecycle. Beyond production, we can act as your strategic partner in clinical validation, medical affairs, and the complex regulatory submissions required to enter new and emerging global markets.
Q: What standards do Gnosis’s US and Asian facilities meet?
Like our flagship facilities in Italy, all Gnosis sites have been designed with the highest standards in mind. Our US and Asia offices operate customer-facing roles, while R&D remains a focus in our European labs. Wherever your Gnosis contact is based, you can feel confident that all of our operations are subject to the same high standards, including our customer support centers based in the US and Asia.
Q: Can Gnosis support us in developing more sustainable food manufacturing
processes?
Yes – we can support you on your journey to adopting more sustainable practices. Our expertise in fermentation doesn’t end with a technical understanding of microbial culture – it extends to the ways in which fermentative processes can replace other, less sustainable chemical synthesis methods with more natural enzyme-catalyzed solutions. We can provide you with the ingredients and guidance you need to establish your own sustainable biocatalysis and biotransformation practices, or we can work with you to optimize methods in our own ECOCERT-certified facilities.
